Fried Egg with Mushroom Recipe (Trứng Chiên Nấm)

I am lazy for cooking any dish today so I choose Fried Egg with Mushroom (Trứng Chiên Nấm) for my main dish today. It is not only easy for cooking, but also really tasty. Came from many amthucquan, this dish is the great combination between egg, mushrooms and onions. If you want to diet, you can apply this one for your meals.

Ingredients:
300g mushrooms (straw mushrooms or king oyster mushrooms)
3 chicken eggs
Spring onion, purple onion, salt, pepper, Magi’s stuff
Process:
Step 1: Cut off the roots of mushrooms, clean well with water added a little salt. Wait to dry and slice small. Clean spring onion, slice small as well.
Step 2: Add 3 eggs into bowl + ½ teaspoon salt + ½ Magi’s stuff + sliced spring onion + a little pepper, stir well. Here is the important step to create the flavor for one of amthucquan .
Step 3: Heat 2 – 3 teaspoons oil, add sliced purple onion and fry until it is fragrant. Add sliced mushroom and fry quickly with large heat in 2 – 3 minutes. Next, add more a little fish sauce and continue to fry more 5 – 6 minutes.
Step 4: Then, add stirred egg mixture in step 2 into pan, cover by lid and wait 5 – 6 minutes.
Step 5: Next, change face of egg and continue frying more 5 – 6 minutes.
